Just Chill Out!


1 slice of good bacon (opt) 1 1/2 white onion diced  1-2 grilled and cleaned red bell peppers  3 garlic cloves diced  SPICES (pinch chilli flakes, 1/2 t cayenne pepper, 1T cocoa, 1 t salt, 1t pepper mix, 1t paprika, pinch cinnamon, 1/4t cumin, 1 bailey leave, 1/2 t garlic powder, 1 t ground coriander), dash of tequila or balsamic vinegar, 400g minced chicken/turkey meat, 1 big can of beans, 1 can peeled tomato,  4T tomato purée, dash of ketchup! 

My very first chilli... i love it! i must admit it may be a little to "deep" for most people i guess i went a little crazy and used almost the entire spice cabinet! Still it's not hot at all, but you'll leave the table breathing better.... ahahahah! Here it goes.... oh and this time I went totally nuts and added 3 chocolate bits 5 minutes before serving... Let's just say i won't be eating anything else today! Ahahaha.... well enjoy!!!!


  In a large skillet, fry the diced bacon and put aside. Sauté the onions, then add the peppers and the spices. Add the garlic and right after de glaze with the balsamic vinegar or add the tequila. In goes the meat, stir around and add the beans and tomato. At last add the bacon  and let it cook at low heat for 15-20 minutes! Done! Overall takes 30 minutes to do! Serve with bread, white rice or just spoon it down! fresh it up with fresh herbs, like mint hum i'll try that next time! I'll also be trying another version with chipotle when i can find it!

Hamburguers with a twist!


1 ripe avocado 4 chicken/turkey hamburgers 1 ripe tomato sliced  4 thin slices of good cheese 4 great buns*  fresh lettuce leaves 
Grill the burgers seasoned and brushed with olive oil (assemble yourself the meat patties and don't buy cheap meat like i did this time ...iarccc! Just buy ground meat, season it, add garlic or chillies if you like and shape the patties). Toast the buns and assemble the burgers with the diced avocado, tomato and lettuce!
*Best buns in Portugal: "Pão Árabe" da Sacolinha!

Savory Cake

200 g self raising flour 3 eggs 1 cup grated cheese 100 mL milk 100 mL oil/olive oil salt&pepper
Pre-heat oven. Beat the eggs until foamy then whisk in the oil and milk. Season and add the flour slowly. Add the cheese. Place batter in  buttered pan and bake for about 25-30 minutes or until  top is brown and the filling consistent. To this basic recipe i've added roasted peppers but you can use almost anything: onions, mozzarela, feta or edam cheesse, muschrooms, bacon dried tomato, salmon, tasted almonds, pinenuts....

Vegetarian Quick "Tagine"


1 onion 4 garlic cloves 3 tbsp olive oil 1(1/4) tsp salt 1 tsp ginger 1 tsp turmeric 374 tsp cinnamon 1/2 tsp black pepper 1/4 tsp cayenne pepper 1/2 tsp cumin pinch of nutmeg 1 cardamom seed 2 tsp dry coriander 1 tbsp tomato puree a hand of fresh herbs (parsley, coriander, mint) 1 large chopped carrot 1 chopped zucchini 2 cups of water or stock 2-3 tbsp honey 2 cups can chick peas 1 cup brussel sprouts 1 cup of couscous toasted almond shaves lemon juice olive oil

Following the order of ingredients presented above: in a large skillet with a lid, heat the oil and saute the onion and the garlic (add after the onion and don't let it burn); add all the spices and herbs, then the carrots and zucchini; add the liquid and let the vegetables cook until softened over low heat (bearing in mind you will cook the couscous on the remaining liquid add the necessary quantity); add the honey, chick peas and brussel sprouts; remove from heat check for enough liquid and add the couscous (if you find no enough liquid do not add water or stock now, just cook the couscous separately meaning add hot water to it and let it absorb it). Squeeze lemon juice, fresh olive oil and sprinkle toasted almonds per serving!

 Boil eggs for about 3 minutes to harden the whites but keep yolk runny... eat with slices of toasted  bread or "soldiers"! i love to scoop egg yolk with spoons of vegetable butter...

What I most enjoy about this is location location location... it's what we most need in lisbon, a place to just bloddy sit and enjoy a good hendricks (my first actually! thanks ana!) especially because dining out is so expensive! How about stuffing yourself at home and then enjoy a great cappucino, brownie, lime tart, drinks, glass of wine or even a relaxed brunch on a weekend! Great staff (thanks for the hendricks glass).
